development of German young people's interest in the field of gastronomy from 2020 - 2023

CASE

The field of gastronomy (restaurants, hotels and the like) is one of the important things in every country, including Germany. For people who want to learn more, in Germany there is also a special program, namely "Ausbildung". However, unfortunately, there is a lot of news that states that in Germany there is a huge shortage of workers in the gastronomy sector, which has been discussed in various well-known media. Actually, how interested are young people in this field?

To solve the problem above, 3 datasets created in Microsoft Excel taken from various websites will be used to provide concrete answers. Here MySQL and Tableau will also be used for exploratory data analysis and data visualization.

Trend Analysis

In this section, we will see how was the development of the number of young applicants in the last 5 years. If it decreases, we will see what influences that.

in the field of gastronomy, 5 positions for training (ausbildung) are offered. We can see that from all these positions there was a decline in 2020 and tends to increase slowly starting from 2021 to 2023. And in the period from 2021 to 2022 the development of the number of applicants is quite stagnant in several positions.

Here we will also see what age range young people are interested in ausbildung in the field of gastronomy and the gender that dominates in this field of gastronomy over the last 5 years.

From the data above it can be seen that ages 16 - 18 dominate and male applicants have a greater number than female applicants.

Even so, we have seen from the trend over the past 5 years that the development of young people's interests tends to stagnate and has even experienced a decline. What actually influences this?

These are top 5 reasons why this field is not young people's thing. The solutions that can be offered for each of these problems are:

  1. Low Pay: Increase wages and incentives, Offer performance-based bonuses
  2. Bad Working Conditions: Enhance work environment and safety, enforce labor regulations, Provide training programs
  3. Lack of Recognition: employee recognition programs, personal development plans, feedback mechanisms
  4. Lack of Career Prospects: career path development, offer further education and training, mentorship programs
  5. Lack of Support from Employers: regular communication, wellness programs, inclusive policies

Major-wise Interest

In this section we will see which position has the highest and lowest interest

we can see here that the job of chef is the job most in demand by young people who want to gain knowledge in the field of gastronomy. Followed by a restaurant specialist in 2nd position and a system restaurateur in the last position.

Applicant-Company Comparison

Here we will identify the comparison of the number of applicants with the number of positions available. With the dataset provided, we use Tableau to create a line table to make comparisons.

overall, the number of applicants is still higher than the number of positions offered. Even so, there are still many cases of labor shortages in this field. This could be due to prospective applicants not meeting the company's criteria, the requirements being quite burdensome or it could refer to the data "top 5 Reasons for the Decline in the Number of Applicants" above.

Peak and Trough Years

Here we will identify in which year were there the most applicants and the fewest applicants

From the data presented, 2023 was the best year where it had the highest number of applicants, even higher than 2019, but 2020 was quite an unpleasant year considering that the number of applicants has fallen by quite a significant amount.

This discrepancy might be due to stringent requirements, unmet criteria by applicants, or the broader issues identified earlier. Addressing these barriers could help in bridging the gap. 6. Peak and Trough Years: The year 2023 saw the highest number of applicants, surpassing even pre-pandemic levels of 2019, while 2020 experienced a significant drop. This indicates a recovery trend, albeit slow, suggesting that with the right measures, the sector can regain and even surpass its former appeal.
